Salmon patties with fresh green salad, avocado, valerian, radish and ginger.

1 tablespoon olive oil

4 salmon burgers 100g each

For the dressing:

4 tablespoons olive oil

1 tablespoon fresh ginger, grated

1 lime, zest and juice

For the salad:

1 mixed salad of green leaves

1 avocado, sliced

5 radishes, sliced in mandolin

Salt & Pepper

To serve:

1 lemon, wedged

Fresh thyme

Heat a grill pan over medium heat and sauté the burgers for 2 minutes on each side in a little olive oil.

For the dressing, place all the ingredients in a blender and puree.

To assemble the salad, place all the ingredients in a bowl, pour the dressing over the salad and mix gently.

Serve the burgers with the salad, sprinkle with fresh thyme and garnish with lemon wedges.
