Whole Salmon roasted with lemon

- 1 whole salmon (about 3-4kg)
- 1 lemon, sliced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Preheat oven: Preheat your oven to 425°F (220°C).
- Prepare salmon: Remove the gills and tail fin from the salmon. Stuff the cavity with lemon slices, dill, parsley, and garlic.
- Season: Drizzle the outside of the salmon with olive oil and season with salt and pepper.
- Roast: Place the salmon on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-30 minutes, or until the salmon is cooked through. The fish will flake easily when ready.
Serving suggestion: Serve with roasted vegetables, a side salad, or a creamy sauce.
